If you don't have pumpkin pie spice, you can substitute 1 teaspoon ground cinnamon and 1/4 teaspoon ground nutmeg.
Ingredients
1 1/2 cups all-poupose flour
3/4 cup whole wheat flour
1/4 cup sugar
1 tablespoon ground pumpkin pie spice
1/4 teaspoon salt, or to taste
2 eggs
2 cups milk
3 tablespoons melted butter or margarine
1/2 teaspoon vanilla
1 1/2 cups chopped apples
Butter, margarine, or oil for greasing
Method
- Preheat the waffle iron according to manufacturer's directions
- In a large bowl, stir together both flours, the sugar, baking powder, pumpkin pie spice, and salt.
- In a medium bowl, beat the eggs; beat in the milk, butter or margarine, and vanilla.
- Stir in the liquid ingredients into the dry ingredients until just combined. Stir in the apples.
- Grease the waffle iron and spread 1 1/4 cups of batter onto it. Cook until the iron no longer steams, about 5 minutes Repeat twice more with remaining batter.
Variation: For a crunchy texture, add 1/3 cup ground pecans when you add the apples.
